I never liked beets as a kid. I thought they were absolutely disgusting! I didn’t understand how anyone could like them … I mean they taste like dirt!

It wasn’t until about three years ago, when I had stopped by my parent’s house, and my mom offered me some cooked beets. At first, I was hesitant because I found them to be repulsive, but for some reason I decided to have a bite. That bite became two bites, and before I knew it, I had eaten the whole thing!

It was absolutely delicious! Now, I go crazy for beets. My mother in-law grows them in her garden, so now I’m spoiled rotten! If you can grow them yourself, or get them from your local farmers market, they’re the best.

Beets are an amazing vegetable source for the mineral iron. And, believe it or not, the beet greens actually provide even more iron!

Did you know that Swiss Chard is actually the white rooted beet variety? There are also yellow rooted beet varieties, which tend to be sweeter in taste and flavor.

So many choices! I say, try them all. Why not?

Back to the red rooted beets, these guys have an anti-cancer component, which may be due to betaine – the pigment that gives beets their red color.

To fully benefit from the health promoting goodies found in this amazing vegetable, it would be best to eat them raw. You could grate and add them to a salad, make a salad with the beet greens, or make fresh beet juice. Have you ever had Beet Carrot Juice? It’s amazing!

Lately, I’ve been enjoying beet chips. I know they’re not raw, but they’re really good. I think they make a great tasting, healthy snack that you don’t have to feel guilty about eating. And, if you’re going to eat chips, these are a better alternative to store bought potato chips!

I lightly sprinkle these with sea salt when I pull them out of the oven, and they’re scrumptious!

Recipe: Yummy Homemade Beet chips

Yummy Homemade Beet Chips - Sophisticated Booty

Ingredients:

  • 2 beets, at room temperature, thinly sliced
  • 1 teaspoon coconut oil, melted
  • sea salt (optional)

Directions:

  • Preheat oven to 350 degrees F. Slice beets 1/8 inch thick (a mandoline works best).
  • In a bowl toss beets with melted coconut oil. Place beets in a single layer on two baking sheets.
  • Bake for 20 minutes, or until edges begin to dry out. Switch upper baking sheet to lower rack, and lower baking sheet to upper rack, rotating each baking sheet 360 degrees.
  • Bake for another 20 minutes. Place chips on a wire rack to cool. Sprinkle with sea salt.
